In 1985, André-Jean joined the winegrowing adventure, working alongside his father on the estate. Until 2009, the grapes were delivered to the \u003cstrong\u003ecooperative\u003c\/strong\u003e, but that was the year André-Jean decided to leave this structure. He then built a \u003cstrong\u003ewinery\u003c\/strong\u003e and a \u003cstrong\u003ecellar\u003c\/strong\u003e. In 2016, his wife Héléna joined him to contribute to this wonderful adventure. The ammonite on the bottle labels is a reference to the many fossils found in the estate's soil.\u0026nbsp;\u003cstrong\u003eDomaine de la Touraize\u003c\/strong\u003e covers \u003cstrong\u003e9 hectares\u003c\/strong\u003e of vines grown using \u003cstrong\u003eorganic\u003c\/strong\u003e and \u003cstrong\u003ebiodynamic\u003c\/strong\u003e methods. A precious part of the vineyard includes vines that are over a hundred years old. The soils reflect the entire Jurassic heritage, with \u003cstrong\u003eblue marl\u003c\/strong\u003e, \u003cstrong\u003eclay-limestone marl\u003c\/strong\u003e, \u003cstrong\u003eclay-limestone marl\u003c\/strong\u003e and \u003cstrong\u003egravel on marl\u003c\/strong\u003e. In the cellar, \u003cstrong\u003eDomaine de la Touraize\u003c\/strong\u003e relies on \u003cstrong\u003enatural fermentation\u003c\/strong\u003e, with the exclusive use of \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e and \u003cstrong\u003eno added inputs\u003c\/strong\u003e. The natural white wines rest on their lees for an ageing period ranging from \u003cstrong\u003e9 to 24 months\u003c\/strong\u003e, in tuns or in rooms, without new wood. Red wines are matured \u003cstrong\u003ein tuns\u003c\/strong\u003e, \u003cstrong\u003evats\u003c\/strong\u003e or even \u003cstrong\u003eamphorae\u003c\/strong\u003e, depending on the vintage.
