Adrián Alonso souhaite non seulement restaurer ces vieilles vignes, mais aussi préserver les murets en pierre sèche, les terrasses et le paysage agricole traditionnel qui les entourent. The wine is then aged for thirteen months in multi-vintage barrels to preserve the full expression of the fruit and terroir. The nose reveals raspberry, fresh cherry, wild flowers, and a delicate touch of spices. The palate is supple, bright, and perfectly balanced, with beautiful energy and a fresh finish that immediately invites another sip. The grapes are partially destemmed, some are foot-trodden, then fermentation and malolactic fermentation occur naturally before 13 months of aging in used 600-liter barrels, without fining or filtration. The wine opens with notes of blackberries, black cherry, licorice, and wild herbs, with a deep minerality that accompanies the entire tasting experience. The palate is full, elegant, supported by silky tannins and striking freshness that lengthens the finish.
