The grapes are hand-harvested and vinified as whole clusters, with a semi-carbonic maceration of about two weeks and very little pigeage, followed by aging for eight to twelve months in old barrels, without filtration or added sulfur, or only in minute doses. The wine opens with fresh raspberry and cherry notes, with a delicate floral touch and a slightly peppery structure.
