Maxime Ullens vinifies each plot separately in small Champagne barrels, with fermentation and aging on fine lees, before a long period on the lees in the bottle. In the 2022 vintage, no dosage, no added sulfur, no fining or filtration: the Meunier is left completely naked. We find white fruits, citrus fruits, some flowers and a chalky touch, with fine bubbles, a winey palate and a beautiful salinity on the finish.
