The grapes are macerated for seven weeks, then the wine is aged for a long time in demi-muids for six years, without any intervention. Indigenous yeasts lead the fermentation, with no fining, no filtration and no added SO₂. The palate is full-bodied, textured, with remarkable saline depth and impressive length. Despite its power, the balance remains masterful. A great meditation wine, radical and controlled.
