The young vines are mostly destemmed, with about 40% whole bunches, before an eighteen-day fermentation in open vats followed by fifteen months of aging in multi-vintage French barrels. The nose combines sour cherry, fresh blackberry, spices and a delicate smoky touch characteristic of volcanic terroirs. The palate is straight, deep, with fine tannins and a beautiful energy that lengthens the finish.
