Its wines are vinified with native yeasts, and most of them undergo \u003cstrong\u003esemi-carbonic maceration\u003c\/strong\u003e. The influences and energy of punk are found in its wines, which shake up conventions and challenge traditional values, offering aromatic power and a strong character. His wines are intended to be free, uninhibited and imbued with indomitable energy. In addition to his famous \u003cstrong\u003ePineau\u003c\/strong\u003e \u003cstrong\u003ed'Aunis\u003c\/strong\u003e, Brendan vinifies grapes from little-known and rare grape varieties such as \u003cstrong\u003eRomorantin\u003c\/strong\u003e, \u003cstrong\u003eOrbois\u003c\/strong\u003e, \u003cstrong\u003eSauvignon\u003c\/strong\u003e, \u003cstrong\u003ePinot\u003c\/strong\u003e and \u003cstrong\u003eGamay\u003c\/strong\u003e.
