{"title":"Domaine de l’Enclos","description":"\u003cp\u003eThe \u003cstrong\u003eDomaine de l'Enclos\u003c\/strong\u003e is \u003cstrong\u003e29 hectares\u003c\/strong\u003e of vines in \u003cstrong\u003eorganic farming\u003c\/strong\u003e (Ecocert certification) on the \u003cstrong\u003e4 levels\u003c\/strong\u003e of the \u003cstrong\u003eChablis appellation\u003c\/strong\u003e and in particular on some of the most beautiful terroirs of the vineyard. The estate is located in the heart of \u003cstrong\u003eChablis\u003c\/strong\u003e in a large property, former home of the working monks of Pontigny Abbey, including a large 19th century building and a partly underground cellar built in 2016. It is today managed by two brothers, \u003cstrong\u003eRomain\u003c\/strong\u003e and \u003cstrong\u003eDamien Bouchard\u003c\/strong\u003e. \u003cbr\u003e Most of the work is done in the vines: respectful Poussard pruning, organic fertilizer, disbudding, careful trellising, leaf stripping, manual harvesting. \u003cbr\u003eRomain and Damien attach great importance to the \u003cstrong\u003elife of the soil\u003c\/strong\u003e, maintained by \u003cstrong\u003escratching\u003c\/strong\u003e and \u003cstrong\u003esowing\u003c\/strong\u003e. To preventively protect the vines from diseases, they only use products of natural origin, copper, sulfur and plant preparations. \u003cbr\u003e 2016 is the first vintage vinified at \u003cstrong\u003eDomaine de l'Enclos\u003c\/strong\u003e, in their new gravity cellar. The grapes are harvested at \u003cstrong\u003efull maturity\u003c\/strong\u003e (no chaptalization), sorted on a vibrating table, pressed pneumatically and the juices flow by gravity into stainless steel vats installed in an underground cellar of \u003cstrong\u003e450 m2\u003c\/strong\u003e where temperatures are controlled.​ \u003cbr\u003e Vinification is done \u003cstrong\u003ewithout input\u003c\/strong\u003e, \u003cstrong\u003eno sulfur\u003c\/strong\u003e, with \u003cstrong\u003enative yeasts\u003c\/strong\u003e and the aging of the wines in vats and barrels can last up to \u003cstrong\u003e18 months on the lees\u003c\/strong\u003e. The wines are neither fined nor treated by cold.
