The 2021 spent nearly four and a half years in amphora under a veil of yeast, without fining, filtration, or added sulfur, which gives it an incredible depth without losing its tension. Notes of white peach, citrus, flowers, dried herbs, and a true volcanic salinity come through, with a creamy yet very lively palate.
