Here, Marc works with whole bunches, fermenting with indigenous yeasts followed by 12 to 18 months of aging—two-thirds in used barrels and one-third in new barrels—with no fining, filtration, or added sulfur. The wine is deeper, featuring black cherry, flowers, spices, and a limestone structure that keeps the profile very upright. The palate has depth but remains refined, with infused tannins and beautiful length.
