The grapes, mainly from old German clones supplemented by some Burgundian mass selections, ferment with one-third whole clusters after a short carbonic maceration, before fifteen months of aging in French oak barrels that have held several wines. The wine opens with notes of morello cherry, fresh blackberry, sweet spices, and a delicate smoky hint. The palate is full, deep, supported by a silky texture and a mineral freshness that remarkably lengthens the finish.
