Amaury Beaufort

Amaury Beaufort comes from a large family of Champagne winemakers. His father, André Beaufort, built his reputation on the villages ofAmbonnay and Polisy. Amaury's grandfather, Jacques Beaufort, was one of the pioneers oforganic farming,going organic in 1971 after suffering an allergy to the synthetic products used in the vineyards at the time. But let's get back to Amaury. After training at the Beaune wine school, he initially set up in Tonnerre, in the Chablis region. He then decided to take over an 88-acre vineyard belonging to his father in Aube.
Amaury appreciated the microscopic size of the vines, which meant he could harvest the entire estate in 48 hours. Needless to say, all the vines are organically farmed, and the family vineyards have been chemical-free since the 1970s. Amaury occasionally buys a few grapes from his neighbours to supplement his production.
In the cellar, Amaury surprised us with his long, 24-month maturation in tuns. The result is clear wines with a complexity you don't see every day in Champagne. The wines are then bottled vintage by vintage and finally marketed unfined.
Les Jardinots is the perfect example of what we like about Amaury's work. The only problem is that the winemaker only produces 6,000 bottles each year, a large proportion of which are already reserved for the finest restaurants in France and elsewhere.
