House Valette

The Valette family has been established in the Chaintré area of Burgundy for three generations. Gérard Valette, Philippe's father, began his winegrowing career here. Today, the Valette estate is run by Philippe, his brother Baptiste and his wife Cécile. For over 20 years, the vines have been cultivated using organic methods and beyond. The clay-limestone soils typical of Burgundy are ploughed or grassed, depending on the plot. The domaine grows only Chardonnay, and has built its reputation on long ageing and the marketing of refined, ready-to-drink cuvées.

The Valette's wines come from the famous terroirs of southern Burgundy, including Pouilly-Fuissé, Mâcon-Chaintré, Pouilly-Vinzelles...

As far as the cellar is concerned, one main ingredient is employed by the Valette family: time. Fermentation takes place naturally in oak barrels, sometimes over several months (and more rarely, several years). Aging then takes place over several years, both in barrel on the lees, and then in bottle before the wines are marketed.
