Cazaban

Domaine Cazaban, established in 2007, is a vineyard located in Villegailhenc, near Carcassonne, in the heart of the Pays Cathare region. Since its creation, the estate has placed emphasis on an environmentally friendly wine culture, obtaining organic certification in 2010 and biodynamic certification by Demeter in 2013. In December 2017, the estate was taken over by Emmanuel Taillez, who was joined in February 2018 by Joseph Parcé, having more than 10 years of experience at Domaine de la Préceptorie. This duo of passionate and complementary winemakers have pooled their expertise and their love of the vine to create elegant and fine wines, characteristic of Domaine de Cazaban. Located in the Cabardès appellation, the region benefits from a particular climatic duality, combining Mediterranean mildness and Atlantic humidity, which results in a richness and complexity of the grape varieties. The estate extends over 22 hectares, divided into three distinct zones: the Plaine de Cazaban (clay-limestone soil), the foothills of the Montagne Noire (calc-shale and schist soil), and the West of Minervois (clay soil). -limestone). The vines are planted with Merlot, Cabernet Franc, Cabernet Sauvignon, Syrah, Grenache, Carignan, Mourvèdre, Roussanne, Marsanne, Vermentino and Grenache Blanc, each adapted to the specific terroir.
The harvest is manual, and the work in the vineyard is carried out without the use of chemicals. On arrival at the cellar, the vats are placed in vats by gravity. Winemaking is carried out without adding any inputs, using natural yeasts present on the skins of the grapes. The vatting, macerations, and aging are adapted according to the quality of the grapes and the characteristics of each vintage. The estate can vinify up to 100,000 bottles in its cellar. Domaine de Cazaban stands out for its expressive, intense and straightforward wines, reflecting the care and commitment of this team of winemakers determined to preserve the environment and create quality wines. In 2022, the estate was sold to a Franco-Russian couple retraining in wine, Vika and Didier Mattei, ensuring a promising transition for the future of this driving vineyard in the Cabardès region.
