Jérémy Arnaud

Jérémy Arnaud set up his estate from scratch a little over 2 years ago in the heart of the Chablis vineyards. Coming from a family of winegrowers, Jérémy nevertheless chose to begin his adventure alone, by purchasing a 0.55 ha plot of vines. Alongside his National Oenologist Diploma, Jérémy settled in the town of Beine with a plot of Chablis Premier Cru and another plot of Petit Chablis. He works in many areas, in Chablis, Meursault, Beaune and even Pauillac. He thus has the benefit of observing many types of structures, small and large, conventional and biodynamic.
Jérémy Arnaud seeks to let the plant express itself, to make wines with an identity, reflecting a terroir and a vintage. Convinced that it is in the vineyard that wine is made, he demonstrates an unfailing ecological commitment. Inputs are limited as much as possible in the vines, the soils are worked to a minimum in order to preserve their integrity, ecological development zones are set up around the plots, and the landscape heritage of its vineyard is safeguarded.
In the cellar, it is only followed. Precise actions during the vinification and aging phases are recommended in order to limit ourselves to what is strictly necessary. Nothing is done to erase the origins of the wine or the typicality of its vintage. No yeasting, no inoculation of lactic acid bacteria, no enzymes… The doses of SO2 are limited as much as possible.
A promising winemaker in a Chablis region that is unfortunately not very dynamic for our taste. We look forward to following Jérémy's progress in his future vintages.
