Salima & Alain Cordeuil

Salima & Alain Cordeuil 's estate is located on the Côte des Bar, in Noé les Mallets, a village with the highest slopes in Champagne. It was here, on 4 hectares, that they took over the family vineyards from Alain.
Lovers of the land and respectful of nature and people, they made their first wines in 2011 and converted the entire production to organic farming in 2012.
All the vineyards and wines have been certified organic since 2015. The couple reject all chemical intervention and processes. All the wines are made naturally.
Here's how they describe their work: "We attach major importance to Time. We refuse to rush.
This is reflected at every stage. We give the vines time to regenerate after the harvest, respecting their dormancy. Time for the terroir to express itself, favouring the natural cycle of life. Time for the grapes to ripen, to gorge themselves with sugar, so that they can be picked at the right time to produce well-balanced musts, naturally, thanks to their own yeasts. Time for our wines to be matured for a long time on their lees so that they are a pure reflection of their terroir and climate. Time for our cuvées to age in the cellar, for a minimum of 4 to 5 years, to express their full character, their vintage. Finally, we take the time to share our love of wine and our philosophy with you..."
