After gaining valuable experience at Pierre Overnoy and at Domaine de la Tournelle, Étienne Thiébaud undertook, in 2007, to create his own wine adventure with Domaine des Cavarodes. This estate covers 5 hectares of vines, stretching from the south of Arbois to the north of Arc-et-Senans. Étienne is committed to the production of natural wines, covering renowned appellations such as Arbois and Côte du Jura, as well as local wines from Franche-Comté. The vineyard is a treasure of varying ages, with some vines having seen the light of day 15 years ago, while others have valiantly resisted time for 115 years. Étienne has chosen to cultivate these precious vines following the principles of organic farming, highlighting a deep respect for the terroir. His working methods are a return to ancient practices, characterized by the absence of weedkillers and particular attention paid to soil compaction. He reintroduced plowing and grassing of plots, thus allowing the vines to flourish in a natural environment. Étienne Thiébaud watches over a variety of grape varieties, notably Chardonnay and Savagnin for white wines, and Trousseau, Ploussard, as well as a touch of Pinot Noir for red wines. In the north of the appellation, he continues the cultivation of old varieties such as Portuguese Bleu and Enfariné, which he wishes to rehabilitate and replant. The work in the cellar is orchestrated in harmony with the lunar calendar, with the aim of producing natural wines without artifice. Étienne highlights the simplicity and effectiveness of his wines, designed to faithfully reflect the Jura terroir. Today, Étienne Thiébaud has become an undisputed reference in the field of natural Jura wines.
