Domaine De Moor

Alice and Olivier De Moor, fervent defenders of natural viticulture, are the passionate artisans behind one of the most captivating estates in Chablis.
Their 7.5 hectare estate, located in Courgis, a few kilometers from Chablis, is the home of their passion for wine. It's a true family story, because the "old cellar" where they raise their Chablis is located under Olivier's grandparents' house, thus linking generations to this wine tradition.
After studying oenology in Dijon, Alice and Olivier decided to create their own estate in 1994, with the aim of producing the wines they would like to taste. They quickly began planting on the plots of Bel-Air, Clardy and Rosette, whose limestone soil contains marine fossils dating back millions of years, reminiscent of the ancient sea that covered the region.
The De Moor couple have opted for a nature-friendly approach in their viticulture. They rigorously control yields, carry out manual harvests in boxes and obtained organic certification in 2005. Their use of sulfur, copper and plant extracts for the treatment of the vines is minimal.
Winemaking also follows a natural philosophy, with spontaneous fermentations using native yeasts. The wines mature slowly in Burgundy barrels, are transferred by gravity to avoid any pumping, and are not filtered. Sulfur is used when necessary and minimally.
Their resolutely natural approach and their search for elegance and delicacy make Alice and Olivier De Moor among the most inspiring figures in Chablis viticulture, thus offering lovers authentic wines from an emblematic region of Burgundy.
