The Valette family has been based near Chaintré, in Burgundy, for three generations. Gérard Valette, father of Philippe, began his career as a winemaker there. Today, the Valette estate is run by Philippe, but also his brother Baptiste and his wife Cécile. For more than 20 years, the vines have been worked in organic farming and well beyond. The clay-limestone soils typical of Burgundy are plowed or grassed depending on the plots. The estate only cultivates Chardonnay, and has built its reputation in particular on long aging, and on the marketing of refined vintages, ready to drink. Among the Valettes we find the famous terroirs of southern Burgundy including: Pouilly-Fuissé, Mâcon-Chaintré, Pouilly-Vinzelles... On the cellar side, a main ingredient is used at the Valette: time. Fermentations take place naturally and in oak barrels, sometimes over several months (and more rarely several years). The aging will then take place over several years, both in barrels on lees, then in bottle before the wines are marketed. The high point of the Valette family's work is perhaps synthesized in the vintages Le Clos de Monsieur Noly and Clos Reyssié, two premier crus which are aged for several years in barrels (up to 72 months on Noly). These great white wines from Burgundy delight passionate lovers of great natural Chardonnays, and have earned themselves a reputation of choice on the finest tables in France and elsewhere...
