“To make our Pineau, we always choose grape must from our oldest plots, over 50 years old. These low-yielding plots ensure perfect maturity of the grapes. Pineau is made mainly from the Ugni Blanc and Colombard grape varieties as well as a small percentage of Sémillon. During aging, the cellar master carefully blends different years from these three grape varieties. The blends reveal the fruity aromas of Ugni Blanc and floral aromas of Colombard.”

David Ramnoux cultive en biodynamie le domaine des Bellevues, installé depuis 3 générations dans le cru des Fins Bois. Le vignoble de 8,5 hectares est complanté des cépages Ugni Blanc, Colombard, Sémillon, Merlot, Cabernet Franc et Cabernet Sauvignon sur des sols argilo-calcaires. Cette diversité de cépages offre ainsi une complexité aromatique qui se retrouve dans leurs produits.
