L'Eau Qui Dort
A small-scale wine business run by two dedicated winemakers.
L'Eau Qui Dort is a wine project led by Lisa Le Postec and Paul Aublet-Cuvelier , who, while working on their respective projects, joined forces to create their own wine business. They source organic grapes from Auvergne , Italy , and Catalonia to produce living wine . Their approach in the cellar is minimalist and demanding, allowing them to adapt to different grape varieties, origins, and vintages to create unique blends.

Vermell and MCCB, between blending and Catalan oxidative
For example, their Vermell wine combines Carignan, Grenache and Barbera. The vinification is sometimes dictated by the plot itself, as for MCCB , a Catalan Macabeu vinified oxidatively, from a plot on limestone scree at the foot of a cliff, offering a sharp tension and aromas of bitter almond.
Expressions from Auvergne between Gamay and Chardonnay
They also produce wines from Gamay d'Auvergne , such as the L'Eau des Fleurs cuvée, made from century-old vines in Boudes, in the Puy-de-Dôme. This wine, produced using the traditional carbonic maceration method, has a light profile with a lovely breadth on the palate, typical of the iridescent marl soils of the Boudes hillside.
For the Margédat cuvée, Lisa took care of old Chardonnay vines in Auvergne during the 2022 vintage. Despite a partial loss of the harvest due to birds, the remaining bunches made it possible to create a remarkable wine on marl and basalt.

In short, L'Eau Qui Dort is an innovative and flexible project, where Lisa and Paul, although at the beginning of their adventure, are committed to experimenting and offering authentic, honest and healthy wines.
