A winemaker who came from the wine

Before making wine, Olivier Cohen listened to it at length, served it, and shared its stories. He began as a wine merchant and sommelier , training with leading figures in the world of natural wine in Paris, New York, and Italy. This sensitive and committed journey led him, almost naturally, to settle in the Aspres region , south of Roussillon , between Canet-en-Roussillon and Céret, where he established his own estate in 2013. This career change was guided by instinct and a desire to make wine authentically , in direct contact with the land and those who drink it.

A free, artisanal, and unpretentious approach

On roughly ten hectares, Olivier Cohen cultivates grape varieties typical of Roussillon— Carignan, Grenache, Syrah, Macabeu, Muscat —with constant attention to living organisms , natural rhythms , and manual labor . No herbicides or synthetic products are used, neither in the vineyards nor in the winery. In the cellar, everything is vinified without additives , without added sulfur, and without filtration, in a pure, rustic spirit where the expression of the fruit takes precedence over any form of technical expertise.
