The vine and the wine as a single organism

Pacalet works in micro-plots, with grapes from vines cultivated according to organic and biodynamic principles. The harvest is manual , the intact grapes arrive at the cellar as living matter to be accompanied. No inputs , no yeasting, no filtration or fining: only indigenous yeasts guide slow and precise fermentations. Each vintage thus becomes the naked expression of its terroir, between fruit, texture and energy.

Vibrant vintages, between finesse and character

Philippe Pacalet plays with regional boundaries with his wines: Chablis 1er Cru Beauroy 2020 and 2022 , taut, saline, with hints of wet stone and citrus zest; Monthélie , more caressing, with a palate of cherry and violet, which retains a precise and airy structure; and even Cornas 2019, which reveals a racy, sanguine Syrah, carried by the minerality and freshness of the granites. Each bottle is an invitation to patience and emotion, the signature of great living wines.
