Created in the 1960s by Lucien Aviet , an emblematic figure of the Jura vineyard, the Caveau de Bacchus today perpetuates a tradition of artisanal excellence in Montigny-lès-Arsures , the historic birthplace of the Trousseau grape variety. Today, supported by his son Vincent, Lucien continues to produce wines with strong personalities, rooted in their terroir, produced in small quantities, with rare rigor and authenticity.
Local vintages, vinified without compromise
On plots located on hillsides, planted with Trousseau, Ploussard, Melon à Queue Rouge or Savagnin, the estate works the soil without weedkillers, practices manual harvests, and vinifies with the utmost respect for the grape varieties and vintages. Here, there is no technological wine: the vintages - such as the Cuvée des Géologues , the Cuvée des Docteurs , or the majestic Vin Jaune “Confrérie” - are fermented naturally, sometimes aged under a veil, and always bottled without artifice.
