Founded in the 1960s by Lucien Aviet , an emblematic figure of the Jura wine region, the Caveau de Bacchus continues today to uphold a tradition of artisanal excellence in Montigny-lès-Arsures , the historical birthplace of the Trousseau grape variety. Now assisted by his son Vincent, Lucien continues to craft wines with strong personalities, deeply rooted in their terroir, produced in small quantities, with rare rigor and authenticity.
Terroir-driven wines, crafted without compromise
On plots situated on hillsides, planted with Trousseau, Ploussard, Melon à Queue Rouge , or Savagnin, the estate cultivates the soils without herbicides, practices manual harvesting, and vinifies with the utmost respect for the grape varieties and vintages. Here, there is no technological winemaking: the cuvées—such as the Cuvée des Géologues , the Cuvée des Docteurs , or the majestic Vin Jaune “Confrérie” —are fermented naturally, sometimes aged under a veil of yeast, and always bottled without artifice.
