A trajectory from humble vine to free gesture
Permanently installed in 2016 At Thoureil , in the Cellars of the Abbey of Saint-Maur , Sylvain Martinez shaped his project through experience. Initially an employee of Olivier Cousin cultivated his first hectare in 2006, then acquired He acquired an additional 1.5 hectares in 2013 , before fully settling on his land. Today, he manages approximately 3 hectares of vineyards , in organic farming , on grape varieties such as Chenin, Grolleau, Gamay and Pineau d'Aunis . Since 2019, he has been experimenting with the use of amphorae , particularly for long-term macerations.
Wines without additives, honest, imbued with the Loire Valley spirit.
Sylvain Martinez 's winemaking is characterized by its simplicity: without any added inputs or sulfites , the fermentations take place in indigenous yeasts . Its wines — red, white, sparkling or orange — boast a purity of fruit , a straightforward structure and one mineral expression faithful to the Loire Valley terroir. Among its references are wines such as Onis (Red Pineau d'Aunis) Drop of O (Chenin) or Tweet (sparkling Chenin) illustrate this lively and demanding approach.
