L’Eau Qui Dort is a project led by Lisa Le Postec and Paul Aublet-Cuvelier. Both winegrowers working in parallel on their respective projects, they combined their strengths during their first years and set up their business. To help get them off the ground, they went looking for grapes in Auvergne, but also in Italy and Catalonia. The grapes they buy are at least organically farmed, so that they can then be vinified into natural wine. In the cellar, their approach is minimalist but demanding. They adapt to the different grape varieties, the origins of the grapes and the vintages to then compose original blends. Proof of this is with Vermell which welcomes Carignan, Grenache and Barbera. It is the plot which will sometimes dictate the vinification as for MCCB, this Catalan Macabeu vinified in oxidative. A beautiful plot on limestone scree at the foot of a cliff, a sharp tension and a nose of bitter almond... Sometimes, it is simply Gamay d'Auvergne that Paul and Lisa vinify, as for their cuvée L'Eau des Flowers. We are here in Boudes, in the south of Puy-de-Dôme. Some century-old Gamays in well-ripe stakes gave rise to carbonic maceration in the purest Auvergne tradition. A light Gamay profile, but with a nice fullness on the palate, characteristic of the iridescent marls of the Boudes hillside. For Margédat, Lisa took care of these old Auvergne Chardonnay vines throughout the 2022 vintage. If the birds took a good part of the harvest, the few remaining clusters gave life to a cuvée on marls and basalts which enchanted us . You will have understood, L'Eau Qui Dort is a project that adapts, plays and reinvents itself. Lisa and Paul are only at the beginning of the adventure, but they are keen to experiment joyfully, to offer sincere, frank and healthy wines.
