👨🏼‍🌾Beer created by La Maison Romane.

A beer that doesn't pull any punches ! With its amber colour and copper highlights, Mousses Sauvages Pig Ale 2022 has a strong character. The nose takes us in straight away with malty notes and a light smokiness, followed by sweet spices and a hint of aromatic herbs. On the palate, it's a real knockout: round, full-bodied, with a fine bitterness reminiscent of earthiness and rusticity. Ideal with a good charcuterie dish or grilled meats, this ale is a call to conviviality - one sip and you're immersed in the terroir !

In 2004, Oronce de Beler, driven by his passion for Burgundy Pinot Noir, made the decision to leave Paris to settle in Vosne-Romanée. He then embarked on a whole series of experiences in the world of wine, including wine training in Beaune, winemaking courses in family estates, and even the creation of a horse plowing company in this Burgundian region of the gold Coast. And it is following all these meetings, enriching exchanges, and numerous tastings that La Maison Romane emerges. During the 2005 harvest, Oronce de Beler bought his first grapes, marking the beginning of his wine adventure. From the start, he adopted a consistent winemaking approach: minimalist and natural, with intervention and use of sulfur reduced to what was strictly necessary. Its objective is to preserve the purity of the fruit and the authentic expression of the terroirs. He systematically opts for whole-cluster vinification. In 2017, La Maison Romane moved to Nuits-Saint-Georges, offering winemaking space in a more spacious vaulted cellar, thus allowing for increased development of the estate. Obviously the starting point of this entire process is the grapes and this is why Oronce cultivates close relationships with talented winegrowers, whose practices are oriented towards organic farming, biodynamics, or viticultural methods that respect the soil. and their ecosystem. The harvest is done manually, with careful selection of each bunch, both in the vines and on the sorting table, guaranteeing the purity of the wine. Maison Romane favors the very high quality of the grapes. In the vat room, interventions are reduced to what is strictly necessary, with punching down limited to the final phase of vinification, and minimal, if not absent, use of sulfur. The wines are aged for 12 months in old oak barrels. Since its beginnings, the house has maintained a philosophy of non-fining and non-filtration, and each bottle is bottled manually, with a wax seal bringing a touch of authenticity to all their vintages. This commitment to purity, respect for terroirs, and simplicity in winemaking characterizes the meticulous work of Oronce de Beler at Maison Romane.

A superb shop offering some truly beautiful natural wines that are off the beaten path. One drawback: the bottles are generally very expensive; it would be nice to expand the range to include more affordable/pleasure wines.

Several sets of specifications correspond to these designations. While sulfites are very often mentioned, rightly accused of causing headaches, many other products can be included in the composition of so-called conventional wines.
Here is an overview of the different specifications for organic, biodynamic and natural products:
The organic farming specifications (AB label) prohibit the use of any synthetic chemicals in the vineyards and winery. However, they do allow for some oenological safeguards during the winemaking process. Sulfites, for example, are permitted up to 100 mg/L for red wines and 150 mg/L for white wines.

In biodynamic winemaking (Demeter or Biodyvin certified), the winemaker not only works without synthetic chemicals but also takes the lunar calendar into account for all their operations. They also use biodynamic preparations (fermented horn manure, silica, herbal teas, etc.) to strengthen the vines. Overall, the winemaker seeks to integrate viticulture into a holistic environment. Sulfite levels can reach up to 70 mg/L for red wines and 90 mg/L for white wines.

In natural wine (Vin Méthode Nature label), the specifications require the use of organic grapes, fermenting naturally with indigenous yeasts (as in biodynamic winemaking). Natural wines receive no additives during the entire vinification and aging process. Only minimal doses of SO2 are permitted (30 mg/L maximum), and these must be declared by the winemaker. No harsh filtration or alteration techniques are allowed. We also find the designation "Vins SAINS" (Healthy Wines), which aims to completely prohibit the use of sulfites.

We are committed to offering you wines from artisan producers, from small, often family-run estates. That's why we take the time to travel across France, from vineyard to vineyard, in search of those natural wines that truly resonate with us.
We are particularly keen to introduce you to the new winemakers of tomorrow who work tirelessly to offer us magnificent wines.
