Early days alongside Jura pioneers
A child of Pupillin, Kevin Bouillet, known as Pépin, launched his own domaine in 2018. The young winemaker first worked with Evelyne and Pascal Clairet of Domaine de la Tournelle before setting up his own operation. In 2018, he took over some family plots, which he added to with the vines of retiring farmers. This brought the total to 4 hectares in Pupillin, near Arbois.
Organic viticulture rooted in Jura terroirs
Nature at the heart of his craft
From the outset, the young winemaker opted fororganic farming. On typical Jura terroirs such asJurassic limestone and the blue and grey marls characteristic of the region, he grows the five emblematic grape varieties of the Jura, as well as a more original variety, the red-tailed melon. In his vineyards, Kévin Bouillet adopts a meticulous approach with the greatest respect for nature. Every treatment is carefully documented, the soils are meticulously tended, and he takes great care to preserve the natural balance.

Tasting, adjusting, and revealing the terroir
In the cellar, Kévin Bouillet works on instinct. He regularly tastes his wines as they mature, explores and plays with the nuances of the cuvées, and adapts to spontaneous fermentation. His aim is to create original natural wines that preserve the true essence of the Pupillin terroir and the Jura identity, but he does not shy away from protecting the wines with homeopathic doses.
