A winemaker who came from wine
Before making wine, Olivier Cohen listened to it at length, served it and told its stories. He was first a wine merchant and sommelier , trained with great names in natural wine, in Paris, New York, and Italy. This sensitive and committed journey led him, almost naturally, to settle in the Aspres , in the south of Roussillon , between Canet-en-Roussillon and Céret, to create his own estate in 2013. A reconversion guided by instinct and the desire to make wine without cheating , in a direct relationship with the land and those who drink it.
A free, artisanal and unadorned approach
On just under ten hectares, Olivier Cohen cultivates typical Roussillon grape varieties - Carignan, Grenache, Syrah, Macabeu, Muscat - with constant attention paid to life , to natural rhythms , and to manual work . No herbicides, no synthetic products, neither in the vines nor in the cellar. In the cellar, everything is vinified without additives , without added sulfur, without filtration, in a pure and peasant spirit, where the expression of the fruit takes precedence over any form of technicality.
Lively, playful and luminous wines
Olivier Cohen 's vintages have that spontaneous and joyful touch that thrills lovers of natural wines. Fresh, fruity reds , saline, straightforward whites, and lively maceration rosés : each wine tells a sincere story, with a fluid, digestible, free substance , always carried by a solar energy typical of Roussillon. We find the spirit of the winemaker: humble, precise, never dogmatic, and deeply attached to his terroir.
