Sustainable viticulture, without compromise
Although the estate is not certified organic, Billy claims to practice deeply reasoned viticulture, carried out without herbicides or insecticides, with light ploughing and controlled grassing every other row. The approach is pragmatic and committed: respecting the living, without constraining it, while guaranteeing fully ripe grapes. The idea is to let the plant express itself, to preserve its richness and to promote a true terroir signature .
Champagnes aged in barrels, without intervention
All the estate's vintages are plot-by-plot, fermented and aged exclusively in oak barrels for 10 months on lees , without filtration, without fining, without any corrective process. This rigor allows the texture, energy and depth of the wines to be preserved. After disgorging, each bottle benefits from prolonged aging of more than a year , offering balanced, rich, textured champagnes, where the brut nature becomes synonymous with roundness and harmony.
