Winemaker in Le Mesnil-sur-Oger
Stéphane Regnault is a winemaker in the heart of the Côte des Blancs, based in the Grand Cru village of Le Mesnil-sur-Oger. For him, the role of the winemaker is to help the vine express its terroir as faithfully as possible.
Time is essential—crucial, even—to truly understand one's terroir. That’s why Stéphane spent several years working in the vineyards before making his own wine. He first transitioned the estate to sustainable viticulture (HVE & VDC certified), and then to organic farming from the 2020 harvest onward.
In the same spirit, he has been influenced by biodynamic viticulture, using horn manure (500P), silica (501), valerian (507), and herbal teas and decoctions (nettle, horsetail, comfrey, yarrow…). These practices help to reduce copper and sulfur usage and reinforce respect for the soil and living ecosystems.
Distinctive champagnes, naturally fermented
At Stéphane Regnault’s estate, vinification is kept as simple as possible. A beautiful, expressive grape is enough on its own.
He focuses on single-parcel champagnes. Each plot has its own story, its own identity, which is why all fermentations during harvest are spontaneous—the idea being that each parcel has its own biodiversity and native flora. The ferments, naturally present on the grape skins, are different from one plot to the next!
Fermentation occurs naturally, and once complete, the wines undergo a long ageing on lees, allowing them to build structure and gain complexity. The use of SO2 is kept to a minimum.
