Organic viticulture and resistant grape varieties in Chablis

Located in Chablis , Domaine du Triptyque is the project of Tommy Chevallier, a winemaker committed to organic viticulture since 2018. Certified organic in 2022, this 5.5-hectare estate is distinguished by sustainable agriculture, including the use of resistant grape varieties such as Voltis and Floréal, thus reducing phytosanitary treatments. 2022 is the first vintage marketed with the Petit Chablis, Chablis and soon Chablis Premier Cru Montmains appellations.

An eco-responsible cellar and an artistic vision of natural wine

True to its name, Le Triptyque is built on three pillars: nature, wine , and art, with original labels designed by artists. The eco-friendly, modern winery was built in 2023 using bio-sourced materials, with miscanthus straw insulation and solar panels to limit its environmental impact. A philosophy where tradition and innovation meet to enhance the Burgundian terroir.
