Organic farming of course, but above all living viticulture , thought out on the scale of the soil and the hand . Zero inputs , no herbicides or artificial things, but light, fair interventions , in tune with the seasons . The grapes are harvested by hand , vinified with indigenous yeasts , often in whole bunches , sometimes in gentle maceration or slow infusion . The containers vary — vats, jars, barrels — according to the character of each vintage.
