Le Mas des Chimères is located at the southwestern end of the Terrasses du Larzac appellation, more precisely in Octon near Lac du Salagou . Le Mas des Chimères is a family wine estate founded in 1993 by Guilhem Dardé .
A story rooted in the earth
It was historically a mixed farm , then the Dardé family turned to viticulture in the 1960s . Guilhem joined the estate in 1974 , working alongside his father and uncle, before founding his own winery in 1993. His wife Palma and their daughter Maguelonne joined the farm in 1996 and 2008 , respectively.
A diversity of grape varieties and terroirs
The estate cultivates a wide variety of grape varieties on red soils and basalt plateaus , producing organic wines .
Cultivated grape varieties :
– reds: Carignan , Grenache noir , Cinsault , Syrah , Mourvèdre , Merlot , Cabernet
– whites: Muscat , Terret , Viognier , Chardonnay , Grenache Blanc , Carignan Blanc , Roussanne .
This diversity allows the production of a varied range of red, white and rosé wines .
A natural and respectful approach
Known for its respect for the environment , the estate uses indigenous yeasts and limits cellar interventions to preserve the expression of the terroir . Organic practices and natural winemaking are key elements of the Mas des Chimères approach, aiming to produce authentic and expressive wines .
