In the cellar, he uses indigenous yeasts for fermentation , guaranteeing maximum authenticity of his wines. Macerations last between 20 and 40 days depending on the vintage, with daily pumping over to ensure optimal extraction of aromas and tannins . The wines are then aged for 6 to 18 months in used barrels and stainless steel vats , before being refined in bottles for a year .
No filtration or fining is practiced, and the addition of sulfur is strictly limited to necessary cases, in order to preserve the purity and quality of the wine .

Langhe Nebbiolo is a red wine from vineyards planted in 1990 and 2010. It ages for 6 months in steel vats and used oak barrels , then benefits from an additional 6 months of maturation in bottle .
Barolo Perno is a red wine from vines planted in 1986 , undergoes a 20-day maceration , is aged for 24 months in 10-hectoliter oak barrels , then refined for 12 months in bottle .
