 Toujours 100% Pinot Noir, Aubus Ouest revient en 2023 avec un profil particulièrement léger et digeste. On retrouve le style recherché par Double Zéro : une vinification sans artifice qui laisse le fruit au premier plan, sur la griotte, la framboise et les petites épices. La bouche est fine, juteuse, avec peu de tanins et beaucoup d’énergie, dans un registre plus infusé que puissant. Un Pinot Noir de copains, franc et immédiat, qui se boit volontiers un peu frais.

Un micro-négoce né à Beaune autour de deux passionnés
Double Zéro est un micro-négoce bourguignon porté par Jean-François Cuzin et François Bouillot, lancé à la fin des années 2010 autour d’une idée simple : faire des vins de Bourgogne les plus nus possible, avec zéro intrant superflu et zéro soufre ajouté lorsque le millésime le permet. Installé autour de Beaune, le projet travaille à très petite échelle, avec des volumes confidentiels et une production qui reste volontairement artisanale.
Le duo vient de parcours différents mais complémentaires : François a travaillé dans les vignes du Prieuré-Roch, tandis que Jean-François s’est reconverti dans la vigne après un autre parcours professionnel. Double Zéro s’appuie à la fois sur des achats de raisins et, selon les cuvées, sur des vignes travaillées directement, notamment en Hautes-Côtes de Beaune.
Des Bourgognes d’infusion, de fruit et d’énergie
Les vinifications cherchent moins l’extraction que l’infusion, avec des macérations douces, des élevages sobres et l’envie de garder le fruit le plus vivant possible. Les rouges jouent souvent sur le Pinot Noir, parfois associé au Gamay selon les cuvées, avec des profils frais, souples et très digestes. Les blancs et Aligotés suivent la même ligne : beaucoup de tension, peu de maquillage, et une vraie lecture du millésime.
Des cuvées comme Aubus Ouest, Les Pommereys, Saint Martin ou Les Autrots montrent bien l’esprit du projet : des Bourgognes directs, précis et sans démonstration, faits pour être bus avec plaisir mais sans perdre la profondeur du terroir. Une vision très libre de la région, à petite échelle, avec beaucoup d’énergie dans les bouteilles.

About us

Clara has worked in the spirits industry for several years. She has contributed to the renown of Archibald - the French distillery tonic made near Bordeaux - and the Folle Envie aperitif. A native of the Ile d'Oléron and the daughter of fishmongers, her values include respect for fresh produce, short supply chains and a passion for nature.

Baptiste grew up on the Ile d'Oléron. He worked for a biodynamic wine estate in Burgundy and discovered natural wine several years ago. Since then, he has travelled extensively in France and elsewhere to meet these passionate winemakers.

Here's an overview of the different organic, biodynamic and natural specifications:The organic specifications (AB label) ban all use of synthetic chemicals in the vines and in the cellar. It does, however, allow for a few oenological aids during vinification. Sulphites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.biodynamic winemakers (Demeter or Biodyvin label) not only work without synthetic chemicals, but also take into account the lunar calendar for all the operations they carry out.

They also use biodynamic preparations (fermented horn dung, silica, plant teas, etc.) to strengthen the vines. Overall, the winegrower seeks to integrate the cultivation of the vine into a global environment. Sulphites can be as low as 70 mg/L for reds and 90 mg/L for whites.
