Sur le climat Echalais, à Fixin, les sols calcaires et caillouteux donnent au Pinot Noir une structure affirmée et une tension naturelle. Le vin exprime un fruit rouge mûr — cerise, framboise — accompagné d’une touche légèrement épicée et d’un fond minéral. En bouche, la matière est droite, structurée, avec des tanins présents mais fins, portés par une fraîcheur qui équilibre la puissance naturelle de l’appellation. La finale est longue, persistante, avec une belle tenue. S’accordera très bien avec un magret de canard ou une pièce de bœuf grillée.

Domaine Louis Mathieu, micro-négoce d’auteur entre Côte Chalonnaise et Côte de Beaune

Des Nargilets à Beaune, une trajectoire fulgurante

Louis Mathieu n’est pas né dans les vignes, mais il y est tombé très tôt. Originaire de Clamart, il fait ses premiers pas à 6 ans dans la micro-parcelle familiale des Nargilets, à Aluze, au nord de Mercurey, en Côte Chalonnaise. Moins de 20 ares de Pinot Noir sur des sols argilo-calcaires, et déjà une intuition : celle de vinifier. À 14 ans, il signe son premier millésime, encore confidentiel, longtemps réservé au cercle proche. Le déclic arrive plus tard, entre Dijon, Meursault chez Jacques Prieur et surtout l’Allemagne chez Klaus-Peter Keller, où il affine une vision plus verticale du vin. En 2021, une dégustation fait basculer son projet : son Pinot Noir attire l’attention et ses premiers millésimes s’arrachent en quelques heures.

Un projet construit avec exigence et liberté

Aujourd’hui, Louis Mathieu développe ses cuvées avec son épouse Lucile, soutenu par l’Athenaeum à Beaune, qui l’accompagne dans ses débuts en finançant l’achat des raisins et la structure. Le modèle reste volontairement léger : un micro-négoce exigeant, basé sur une sélection rigoureuse de raisins issus de vieilles vignes (plus de 30 ans), cultivées en bio, avec des rendements très maîtrisés. Les terroirs s’étendent désormais entre Côte de Beaune et Côte de Nuits — Fixin, Pommard, Beaune 1er Cru — avec toujours la même idée : multiplier les lieux pour nourrir une seule écriture du vin.

Des vinifications d’infusion, précises et assumées

En cave, tout est pensé pour préserver l’éclat du fruit et la tension. Les rouges sont vinifiés en grappes entières ou partiellement foulées, avec des macérations courtes de 10 à 15 jours, sans pigeage, uniquement des remontages doux au seau. Une approche d’infusion assumée, où la rafle joue un rôle central, apportant relief et allonge. L’élevage dure environ 16 mois en vieux fûts, souvent issus de Riesling ou d’Aligoté, avec une présence marquée des lies pour accentuer la fraîcheur et la précision. Les intrants sont réduits au strict minimum : levures indigènes et soufre mesuré, autour de 18 mg/l, apporté en plusieurs temps pour préserver l’équilibre sans figer le vin.

Une signature d’élégance, entre Bourgogne et influence allemande

Les vins de Louis Mathieu cherchent moins la puissance que la ligne. Ce sont des Pinot Noir légers en apparence mais structurés en profondeur, portés par une acidité nette et une vraie lisibilité des terroirs. L’influence allemande se ressent dans cette recherche de pureté, de tension, presque de verticalité.
