Domaine Payen: A New Energy on Anjou's Schist Soils
Chaudefonds-sur-Layon: An Ambitious Revival in Anjou Noir
Domaine Payen is located in Chaudefonds-sur-Layon, in the heart of Anjou Noir, on those hillsides of green and purple schist that give Loire wines their distinctive tension. Recently taken over by Ludovic Payen, the estate now spans approximately 27 to 28 hectares, with a long history behind it but a brand new impetus. Originally from a different world—he first worked in finance—Ludovic then trained in viticulture, particularly in Burgundy, before returning to the vines with a clear idea: to take over an estate and reveal its full potential.
Organic, Indigenous Yeasts, and Understanding Schist
The estate is currently in conversion to organic farming, with a focus on soil work and respect for biodiversity. In both the vineyard and the cellar, the approach is clear: minimal intervention, indigenous yeasts, and no oenological "makeup" to let the grape and its origin speak for themselves. The emblematic grape varieties of the Loire—Chenin Blanc, Cabernet Franc, Grolleau, Cabernet Sauvignon—are worked here with the ambition of faithfully translating the identity of these schist terroirs, which bring tension, salinity, and depth to the wines.
Straightforward, Vibrant Wines in Full Development
The wines of Domaine Payen seek a balance between fruit brightness and terroir precision. Some cuvées are designed for freshness and charm, while others, from parcel selections, gain more time and depth during aging. Here, we are looking at an estate in full development, but already driven by a clear vision: to make sincere, clear, and vibrant wines, where the Anjou schist expresses itself without filters. A still young signature, but one that is fully part of the Loire's renewal.
