THE Domaine Lesuffleur , managed by Benoît Lesuffleur is at the heart of the Pays d'Auge , in Normandy, with a long family cider-making tradition. After an initial career in the wine industry, Benoît returns to the orchards of his childhood to resume the work started by his grandfather and give cider a true terroir dimension . The orchards, today managed in organic farming encompasses a wide diversity of old apple and pear trees , planted in soils mixing clays, chalk and flint .
At the cider house, the approach is artisanal and minimally interventionist : manual harvesting, fermentation Spontaneity , patience, and respect for the natural rhythm of the juices. Ciders are often made according to the Traditional method , with aging on lees which brings finesse, structure and depth. The ciders of Domaine Lesuffleur are distinguished by their balance , their aromatic complexity and their fine bubbles , affirming a vision of cider vibrant , gastronomic and deeply rooted in its Norman landscape.
