Domaine Bornard, located in Pupillin , passionately embodies the authentic winemaking spirit of the Jura . Founded and developed by Philippe Bornard, and later taken over by his son Tony Bornard , this estate now cultivates approximately 11 to 14 hectares vineyards in agriculture biological and is structured within a philosophy of Minimal winemaking . The work is based on gentle slopes , marl-limestone soils typical of the region, and a range of historic Jura grape varieties: Ploussard , Trousseau , Savagn in , Chardonnay , and even curiosity Red-tailed melon "
Living wines, authentic terroir, and minimal intervention
The wines of Domaine Bornard reflect a radically sincere approach: hand-harvesting, vineyard management without herbicides or chemical inputs, and a cellar where intervention is kept to a minimum. Long fermentations, aging in large oak casks or tanks, and little to no added sulfur characterize this signature style. The wines, whether red, white, or oxidative, display a Remarkable finesse , vibrant freshness, true minerality, and significant aging potential. They are the expression of a free, unadulterated Jura terroir, where nature is allowed to speak.
