The vine and the wine as a single organism
Pacalet works with micro-parcels, using grapes from vines cultivated according to organic and biodynamic principles. The harvest is done by hand ; the grapes arrive at the winery intact, like a living material to be nurtured. No additives , no yeasts, no filtration or fining: only indigenous yeasts guide slow and precise fermentations. Each vintage thus becomes the pure expression of its terroir, a balance of fruit, texture, and energy.
Vibrant vintages, balancing finesse and character
Philippe Pacalet defies regional boundaries with his wines: Chablis 1er Cru Beauroy 2020 and 2022 , taut and saline, with hints of wet stone and citrus zest; Monthélie , more caressing, with a palate of cherry and violet, maintaining a precise and ethereal structure; and even Cornas 2019, which reveals a refined, vibrant Syrah, driven by the minerality and freshness of the granite soils. Each bottle is an invitation to patience and emotion, the hallmark of great, living wines.
