Located in Loches-sur-Ource, in the vibrant heart of the Côte des Bar , Domaine Doussot-Bourdot embodies a unique and modern approach to champagne. Billy Doussot crafts single-vineyard cuvées made exclusively from grapes grown in this village, seeking emotion rather than conformity, through natural fermentations and extended aging in oak barrels. Here, there's no smoke and mirrors, but a true expression of the terroir—raw, unadorned, and alive.

Sustainable viticulture, without compromise

Although the estate isn't certified organic, Billy champions a deeply sustainable approach to viticulture, conducted without herbicides or insecticides, using light tilling and controlled cover cropping in every other row. The approach is pragmatic and committed: respecting living organisms without forcing them, while ensuring fully ripe grapes. The idea is to allow the vine to express itself, preserve its richness, and foster a true expression of the terroir .

Champagnes aged in oak barrels, without intervention

All the estate's cuvées are single-vineyard, fermented and aged exclusively in oak barrels for 10 months on the lees , without filtration, fining, or any other corrective processes. This rigorous approach preserves the texture, energy, and depth of the wines. After disgorgement, each bottle benefits from extended aging of over a year , resulting in balanced, rich, and textured champagnes, where brut nature becomes synonymous with roundness and harmony.
