Near Soings-en-Sologne, Etienne Courtois has taken up the mantle of the family estate founded by his father, Claude Courtois, placing his work within a landscape unusual for viticulture: a Sologne of poor but vibrant soils, woods, fields, and vineyards intertwined. The estate covers approximately 13 to 18 hectares , including several old vines, cultivated without any chemical inputs , with absolute respect for microbial life and biodiversity.

Living wines, diversity and pure expression of the place

Each vintage from Domaine Les Cailloux du Paradis is an exploration: Gamay, Côt (Malbec), Cabernet Franc, Pineau d'Aunis, Sauvignon Blanc, and Romorantin coexist on diverse plots, fermented naturally, and aged for extended periods in barrels or vats, depending on the wine. The wines are characterized by a vibrant minerality , a marked freshness, and a rare freedom of expression : here, the vine breathes, the soil speaks, and the winemaker becomes its messenger.
