The project draws direct inspiration from the culture of the Italian aperitif, where bitterness, freshness, and conviviality take precedence over sweetness. The recipes are built from botanical infusions and natural extracts, in a search for balance and drinkability.

Far from flavored sodas, Iessi claims a A drink with character , dry, expressive, made to be served On ice or in a cocktail , but also to accompany simple meals. A serious and mature take on non-alcoholic drinks, true to the spirit of the aperitivo.
