At the heart of the Côte Chalonnaise, between Mercurey and Rully, the Domaine de la Tour Saint-Hilaire occupies an exceptional site in Fontaines, surrounded by vines, meadows, and forests. Known since the 13th century, this historic terroir had fallen into oblivion before being relaunched in 2014 by the Cadel family, who undertook to revive this unique vineyard.
The estate extends over a vast property dominated by a tower offering a remarkable panoramic view of the entire Burgundy vineyard. Today, Valentin Cadel continues this work of renaissance with a demanding approach, focused on quality and respect for the place.
Chardonnays of character, between precision and depth
The estate's production is exclusively focused on Chardonnay, under the AOC Bourgogne Côte Chalonnaise. The vines are cultivated using organic farming, with significant manual work in the vineyard, controlled yields, and hand-harvesting. The family favors viticulture that is attentive to the soils, without chemical weeding, in order to preserve the identity of the terroir.
The wines are aged in oak barrels and primarily seek a balance between richness and tension. The estate's cuvées are distinguished by their breadth, precision, and their ability to express the personality of this historic hillside.
