The style too, fine yet profound, this Chablis (even in this young vintage) will easily hold its own with a dish in sauce. Try it with an Andouillette de Chablis to stay local.

Laurent Tribut, married to Vincent Dauvissat's sister, learned viticultural practices from René and Vincent Dauvissat, respected figures in Chablis. In 1987, he established his own estate in Poinchy, near Chablis, using land inherited from his father-in-law. Laurent Tribut's estate adopts a sustainable approach, resulting in the use of herbicides. Chemical treatments are kept to a minimum to preserve the integrity of the terroir. Severe pruning limits yields, thus promoting the concentration of aromas in the raisins. Harvests are carried out manually, with rigorous sorting in the vineyard to ensure the quality of the harvested fruit. Fermentation takes place with natural yeasts, thus respecting the character of the raisins. The wines are aged for 18 months, combining used barrels and vats, which preserves the purity of the fruit while adding subtle complexity. This aging method contributes to the depth and elegance of Laurent Tribut's wines, which are often made from lightly millerandé grapes, thus enhancing their complexity. Laurent Tribut's estate covers seven hectares, including four hectares in Chablis villages, nearly two hectares in premier cru Beauroy, 0.8 hectares in premier cru Côte de Léchet, and 0.2 hectares in Montmains. This diversity of plots allows Laurent to produce wines that faithfully express the unique characteristics of each terroir. Laurent Tribut's wines are renowned for their depth and elegance. Each cuvée reflects not only the influence of the Dauvissat family but also Laurent's personal commitment to quality and respect for the terroir. His meticulous approach to viticulture and winemaking continues to produce exceptional wines, which are highly sought after by Chablis lovers. In short, Laurent Tribut embodies the family heritage while bringing his own vision of Chablis viticulture.

Who we are?

Clara has worked in the spirits industry for many years. She has contributed to the great renown of Archibald - the French distillery tonic made near Bordeaux - and of the Folle Envie aperitif. A native of the Ile d'Oléron and the daughter of fishmongers, Clara's values include respect for fresh produce, short supply chains and a passion for nature.

Baptiste grew up on the island of Oléron. He worked for a biodynamic winery in Burgundy & discovered natural wine several years ago. Since then, he has traveled extensively in France and elsewhere to meet these passionate winemakers.

Several specifications correspond to these denominations. Here's an overview of the different organic, biodynamic and natural specifications:Organic specifications (AB label) prohibit all use of synthetic chemicals in the vineyard and cellar. It does, however, allow for a few oenological crutches during vinification. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites. In biodynamic viticulture (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He also uses biodynamic preparations (fermented horn dung, silica, plant teas, etc.) to strengthen the vines. Overall, the winegrower seeks to integrate vine cultivation into a global environment. Sulphites can be as low as 70 mg/L for reds and 90 mg/L for whites. In Vin Méthode Nature, the specifications specify the use of organic grapes, fermented naturally with indigenous yeasts (as in biodynamic viticulture). Natural wines receive no inputs during vinification or ageing. Only minimal doses of SO2 are permitted (30 mg/L maximum), and must be specified by the winemaker. No brutal filtration or alteration techniques are permitted. We also find the Vins SAINS designation, which aims to ban the use of sulfites altogether.
