👨🏼‍🌾Red Wine made by Louis Mathieu.

On the Echalais climate, in Fixin, the limestone and stony soils give Pinot Noir a firm structure and natural tension. The wine expresses ripe red fruit — cherry, raspberry — accompanied by a slightly spicy touch and a mineral background. On the palate, the texture is straightforward, structured, with present but fine tannins, supported by a freshness that balances the natural power of the appellation. The finish is long, persistent, with good hold. It will pair very well with duck breast or grilled beef.

Domaine Louis Mathieu, a boutique négociant between Côte Chalonnaise and Côte de Beaune

From Les Nargilets to Beaune, a meteoric rise

Louis Mathieu was not born into vines, but he fell into them very early on. Hailing from Clamart, he took his first steps at age 6 in the family's micro-plot, Les Nargilets, in Aluze, north of Mercurey, in the Côte Chalonnaise. Less than 20 ares of Pinot Noir on clay-limestone soils, and already an intuition: to make wine. At 14, he signed his first vintage, still confidential, long reserved for his close circle. The turning point came later, between Dijon, Meursault at Jacques Prieur, and especially in Germany with Klaus-Peter Keller, where he refined a more vertical vision of wine. In 2021, a tasting propelled his project forward: his Pinot Noir attracted attention, and his first vintages sold out in a few hours.

A project built with high standards and freedom

Today, Louis Mathieu develops his cuvées with his wife Lucile, supported by Athenaeum in Beaune, which assists him in his early days by financing the purchase of grapes and the structure. The model remains deliberately lean: a demanding boutique négociant, based on a rigorous selection of grapes from old vines (over 30 years old), organically grown, with very controlled yields. The terroirs now span between Côte de Beaune and Côte de Nuits — Fixin, Pommard, Beaune 1er Cru — always with the same idea: to multiply locations to nourish a single winemaking style.

Infusion winemaking, precise and deliberate

In the cellar, everything is designed to preserve the fruit's brightness and tension. The reds are made with whole clusters or partially destemmed grapes, with short macerations of 10 to 15 days, without punching down (pigeage), only gentle pump-overs (remontages) with a bucket. This is a deliberate infusion approach, where the stems play a central role, adding relief and length. Aging lasts approximately 16 months in old barrels, often from Riesling or Aligoté, with a strong presence of lees to enhance freshness and precision. Inputs are reduced to a strict minimum: indigenous yeasts and measured sulfur, around 18 mg/l, added in several stages to preserve balance without immobilizing the wine.

A signature of elegance, between Burgundy and German influence

Louis Mathieu's wines seek less power than linearity. They are Pinot Noirs that are light in appearance but deeply structured, carried by a clean acidity and a true legibility of the terroirs. The German influence is felt in this quest for purity, tension, almost verticality.

A superb shop offering some truly beautiful natural wines that are off the beaten path. One drawback: the bottles are generally very expensive; it would be nice to expand the range to include more affordable/pleasure wines.

Several sets of specifications correspond to these designations. While sulfites are very often mentioned, rightly accused of causing headaches, many other products can be included in the composition of so-called conventional wines.
Here is an overview of the different specifications for organic, biodynamic and natural products:
The organic farming specifications (AB label) prohibit the use of any synthetic chemicals in the vineyards and winery. However, they do allow for some oenological safeguards during the winemaking process. Sulfites, for example, are permitted up to 100 mg/L for red wines and 150 mg/L for white wines.

In biodynamic winemaking (Demeter or Biodyvin certified), the winemaker not only works without synthetic chemicals but also takes the lunar calendar into account for all their operations. They also use biodynamic preparations (fermented horn manure, silica, herbal teas, etc.) to strengthen the vines. Overall, the winemaker seeks to integrate viticulture into a holistic environment. Sulfite levels can reach up to 70 mg/L for red wines and 90 mg/L for white wines.

In natural winemaking (Vin Méthode Nature label), the specifications require the use of organic grapes, fermenting naturally with indigenous yeasts (as in biodynamic winemaking). Natural wines receive no additives during the entire vinification and aging process. Only minimal doses of SO2 are permitted (30 mg/L maximum), and these must be declared by the winemaker. No harsh filtration or alteration techniques are allowed.

We are committed to offering you wines from artisan producers, from small, often family-run estates. That's why we take the time to travel across France, from vineyard to vineyard, in search of those natural wines that truly resonate with us.
