👨🏼🌾 White wine produced by La Terre des Tilles.

With Grange, Alcide Perrin shows that Aligoté can have depth without losing its energy. Sourced from a plot in the Côte Chalonnaise, the wine spends a year in large oak casks followed by eight months in stainless steel tanks, allowing it to gain body while retaining its freshness. You will find ripe white fruits, citrus, and a hint of flowers, with a full palate, lovely tension, and a mouth-watering finish. An Aligoté with character, best left to open in the glass and paired with a fine fish or poultry dish.

Domaine La Terre des Tilles, the rebirth of a forgotten vineyard in Burgundy

A bold career change

Originally from Til-Châtel, on the northern slope of the Côte d’Or, Alcide Perrin first pursued a career in international business law before returning to the land in 2020. He began a degree in viticulture and oenology in Beaune while training with Sylvain Pataille, envisioning a wine project for an area that had not seen a new vine planted in nearly 140 years. His ambition: to breathe new life into a neglected terroir by cultivating historic Burgundy grape varieties with a respectful approach to the living environment.

A terroir rediscovered and vinified with care

The first 2,500 m² planting of Chardonnay was launched in the spring of 2024, but as early as 2022, Alcide Perrin began producing vintages from carefully selected grapes. Working with organic and biodynamic farming methods, he favors slow pressing, aging in oak barrels, and minimal sulfur additions. Although the terroir appears slightly less calcareous than other Burgundian sectors, it is characterized by its conglomerates, sandstone, sands, and flint clays—visual elements of a new viticultural identity. The first wines display a vibrant texture, a nervous freshness, and genuine emerging terroir potential.

Living wines, newfound freedom

With each harvest, Domaine La Terre des Tilles establishes a clear philosophy: nature alone dictates the pace. Each wine is crafted as an interpretation of a place, without artifice or compromise. The result is living wines, carried by the purity of the fruit, mineral freshness, and a sober yet present energy. The estate thus holds the promise of a new expression of Burgundy, marked by freedom, rigor, and passion.

A superb shop offering some truly beautiful natural wines that are off the beaten path. One drawback: the bottles are generally very expensive; it would be nice to expand the range to include more affordable/pleasure wines.

Several sets of specifications correspond to these designations. While sulfites are very often mentioned, rightly accused of causing headaches, many other products can be included in the composition of so-called conventional wines.
Here is an overview of the different specifications for organic, biodynamic and natural products:
The organic farming specifications (AB label) prohibit the use of any synthetic chemicals in the vineyards and winery. However, they do allow for some oenological safeguards during the winemaking process. Sulfites, for example, are permitted up to 100 mg/L for red wines and 150 mg/L for white wines.

In biodynamic winemaking (Demeter or Biodyvin certified), the winemaker not only works without synthetic chemicals but also takes the lunar calendar into account for all their operations. They also use biodynamic preparations (fermented horn manure, silica, herbal teas, etc.) to strengthen the vines. Overall, the winemaker seeks to integrate viticulture into a holistic environment. Sulfite levels can reach up to 70 mg/L for red wines and 90 mg/L for white wines.

In natural winemaking (Vin Méthode Nature label), the specifications require the use of organic grapes, fermenting naturally with indigenous yeasts (as in biodynamic winemaking). Natural wines receive no additives during the entire vinification and aging process. Only minimal doses of SO2 are permitted (30 mg/L maximum), and these must be declared by the winemaker. No harsh filtration or alteration techniques are allowed.

We are committed to offering you wines from artisan producers, from small, often family-run estates. That's why we take the time to travel across France, from vineyard to vineyard, in search of those natural wines that truly resonate with us.
We are particularly keen to introduce you to the new winemakers of tomorrow who work tirelessly to offer us magnificent wines.
