Les Jardins de Theseiis, biodynamic gardening in the Cher Valley
A duo of biologists at the heart of life
At the Domaine Les Jardins de Theseiis , located in Thésée and Monthou-sur-Cher (Loir-et-Cher) , Anouk Lavoie-Lamoureux and Paul-André Risse , both biologists and researchers in respiratory diseases , chose to "garden" the vine rather than cultivate it . Their training with great figures in the wine industry – in Montpellier, Turin, at Château Palmer and at La Ferme de la Sansonnière – enriches their approach .
Wines without additives, a pure expression of the terroir
Their approach is clear: manual harvesting , indigenous yeasts , no inputs , no filtration , and aging in used barrels or vats , all in troglodyte cellars dug into the tuffeau . Their grape varieties are rooted in clay-limestone and flint soils : Sauvignon blanc , Romorantin , Gamay , Pine d'Aunis and Côt (Malbec) . The wines are distinguished by their depth , their minerality , their digestibility and their fidelity to the terroir , characteristic of a non-interventionist viticulture that respects the living .
