Fine wines, expertly managed terroirs, and unpretentious expression

The white wines, meanwhile, reveal a beautiful minerality and a touch of freshness from the Chardonnay.
The estate employs respectful winemaking practices: use of Indigenous yeasts , controlled aging, minimal filtration — everything is done to let the the true nature of the fruit and the terroir . These wines embody the balance between Burgundian classicism And strong fragmented identity , making Simon Bize a reference for lovers of authenticity and finesse.
